Bruneians are very family oriented and they love to gather around an Ambuyat meal (local speciality). Instead of rice and noodles, the staple here is sago paste, which is served with a choice of side dishes. A favourite dipping sauce is the sour and spicy sambal binjai and tempoyak made eith fermented durian and forest fruit. Other dshes included belutak (sundried meat braised with tomato, chili and tamarind), pais ikan (marinated fish wrapped in nipah leaves and grill), beef jerky stir-fried with chillies and onion. To eat ambuyat, you have to use candas (prong-like a chopsticks), scoop up shiny sago paste, twirl it onto the prongs, dip it into some sauce and tuck in.
